Creamy Carrot and Apple Overnight Oats

So many people tell me they just don’t have time to prepare a healthy breakfast in the morning. Others tell me they just have no appetite at breakfast (hey, I get it – I’m the same!). Overnight oats solve both problems. Make them at night, and they’re ready to eat in the morning… or take them with you to work or school, and eat them whenever you get hungry.

The following recipe, featuring Bugs Bunny’s favourite food, feeds 2 hungry people. Or keep it all for yourself, and just split it over 2 mornings.

Ingredients:

1 cup rolled oats
1 cup plant milk (I used Bonsoy)
1/2 cup unsweetened plant milk yoghurt (I make my own from Bonsoy and dairy-free culture from Green Living Australia)
1/2 cup grated carrots
2 tbsp date syrup* – optional; use if you like it sweet 🙂
2 tbsp ground linseed/flaxseed
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp allspice
1/2 tsp cardamom
1/4 cup sultanas
1/4 cup chopped walnuts
1 apple, grated or finely sliced

 

Method:

In a medium mixing bowl, stir together all ingredients except apple until well-combined. Cover and leave in the fridge overnight.

Just before serving, add grated or finely sliced apple.

*You can buy ready-made date syrup from specialty grocers, or make your own: just place pitted dates in a saucepan, cover with water, bring the water to the boil and simmer for 30-60 minutes, depending on how hard the dates are. When dates are mushy, remove from the heat, cool, then transfer to a food processor and blend until smooth. Store leftovers in the fridge.
