Sweet Potato Fries

A healthy twist on an old favourite, these fries are perfect for when you’re craving a little ‘junk food’ but want to stay on track!

2 tablespoons water
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon paprika
1/2 teaspoon sumac (optional)
2 tablespoons nutritional yeast (sold as savoury yeast flakes in Australia)
freshly ground black pepper, to taste
2 large sweet potatoes, peeled and cut into fry shapes or long wedges

Preheat oven to 190°C.

In a large mixing bowl, whisk together the water, dried herbs, paprika, sumac (if using), nutritional yeast and pepper.
Add the sweet potatoes and toss until thoroughly coated. Place the sweet potatoes in a single layer on a baking sheet lined with non-stick baking paper and bake for 45 minutes or until baked through and lightly browned, giving them a stir every 15 minutes.
