Fresh Figs with Macadamia Fig Cream

Figs are delicious and nutritious, in both their fresh and dried form.

  • Figs are high in fibre, potassium, calcium, magnesium, iron, copper and manganese.
  • Dried figs contain a whopping 250 mg of calcium per 100 g; whole cows’ milk has only 118mg per 100 g.

The worst thing about fresh figs is how short their season is. Make the most of them when they’re available!

Ingredients:

Fresh figs – 2-3 per person

50 g dried figs, hard stems removed

30 g pitted dates

60 g macadamias

1 tsp pure vanilla extract

150 ml plant milk

 

Method:

Soak dried figs and dates in boiling water to cover for 1/2 hour. Drain, retaining the soaking water.

Blend soaked fruit with nuts, vanilla, plant milk and enough of the retained soaking liquid to form a smooth and creamy consistency.

Remove stems from fresh figs and cut a cross into them. Spoon macadamia fig cream over the fresh figs.

Leftover cream can be stored in an airtight container in the refrigerator for up to 3 days.
