Ingredients:
2 cups dried lentils
6 cups water (we used 2 cups of liquid from cooking chick peas + 4 cups water)
1/2 medium onion, finely chopped
1 teaspoon dried basil
1/8 teaspoon black pepper
3 large ripe tomatoes, chopped
1 celery stalk, finely chopped

 

Method:

Place the lentils, water, onion, pepper and basil in a pot and simmer for 30 minutes.

Add the tomato and celery and simmer for an additional 15 minutes or until lentils are tender.

Serve with steamed green vegetables.
