Sweet Potato and Lima Bean Burgers

  • Sweet potatoes are high in antioxidants and have a low glycaemic index.
  • Lima beans, like all legumes, are rich in resistant starches that foster the growth of beneficial intestinal bacteria, and cause our bodies to burn stored fat, rather than glucose, in between meals.
  • Walnuts are rich in omega 3 fats.

Ingredients:

1 clove garlic, minced
2 cm piece ginger, minced
1 onion, diced
400 g peeled and steamed sweet potato
600 g cooked, drained lima beans or other white beans
200 g rolled oats
1/2 tsp ground cumin
1 tsp garam masala
1 tbsp chopped parsley
2 tbsp chopped fresh coriander
75 g walnuts, finely chopped

 

Method:

Preheat oven to 180°C.

In a non-stick frying pan, sauté garlic, ginger and onion in a small amount of water until onion is soft.

Transfer to a food processor, and add remaining ingredients. Pulse until combined but not homogenised.

Shape mixture into 8-12 burgers, and place on a baking sheet lined with baking paper.

Bake for 15 minutes. Flip burgers over and bake for another 10 minutes.
