You can use this delicious combination of sweet, baked pumpkin and nourishing white beans as either a dip or salad dressing.

Ingredients:

2 cloves garlic, peeled
400 g drained white beans (e.g. great northern, cannellini)
400 g baked pumpkin
1 tbsp natural peanut butter
2 tsp ground cumin
1/2 tsp ground allspice
2 tbsp chopped fresh coriander
Juice of 1-2 lemons, to taste

 

Method:

Blend all ingredients in a food processor or high-powered blender, adding lemon juice to taste, until smooth and creamy.
