Ingredients:

1 onion
1 clove garlic
500 g pumpkin – peeled if hard-skinned
400 ml water or vegetable stock (I use 1 tbsp Dr Fuhrman’s VegiZest in water)
2 tsp turmeric

 

Method:

Thermomix method

Chop onion and garlic in Thermomix bowl for 3 seconds on speed 6.

Add 3 tbsp water and cook for 5 minutes at 100°C on speed 1.

Add pumpkin and chop for 4 seconds on speed 6. Add water/stock and turmeric and cook at 100°C for 20 minutes on speed 2.

Purée for 10 seconds on speed 9 (take the speed up slowly to avoid an eruption of pumpkin soup out of the top of the bowl).

Regular method

Dice onion, mince garlic and water sauté in a large saucepan until onion is soft.

Dice pumpkin and add to saucepan. Add water/stock and turmeric, bring to the boil, then reduce heat and simmer, covered, for 20 minutes.

Transfer soup to a blender and blend until smooth.
