Ingredients: (Use in your desired proportions depending on the number of servings you require)

Cos letttuce
Red apple, thinly sliced
Lebanese cucumber, thinly sliced
Avocado
Spanish onion
Currants

Peanut Ginger Dressing

2 oranges, peeled
1/4 cup rice vinegar
1/8 cup peanut butter
1/8 cup ABC spread or other nut butter
1 tsp balsamic vinegar
1/2 cm piece fresh ginger, peeled
1 clove garlic

 

Method:

Blend all dressing ingredients in a food processor or high powered blender until smooth. Toss desired amount of dressing with salad.
