This rich and decadent cake is perfect for special occasions. It’s dense, fudgy and delicious!
Ingredients:
Cake
2 cups wholemeal spelt flour
3/4 cup cacao (raw cocoa powder)
2 tsp baking powder
1 1/2 tsp bicarb soda
1 cup date sugar*
3/4 cup (165 g) silken firm tofu
3/4 cup (180 g) unsweetened applesauce^
1/2 cup Teeccino** or coffee, brewed strong
1 tsp vanilla
1 cup unsweetened plant milk (I used oat milk)
Icing
1 cup raw unsalted cashews, soaked in water for 2 hours
1 cup pitted dates, soaked in boiling water for at least 10 minutes (retain soaking water)
1/2 cup (110 g) silken firm tofu
1/2 cup cacao (raw cocoa powder)
1 tsp vanilla
Method:
Cake
Preheat oven to 180°C. Line a 23 cm (9 inch) round or heart-shaped cake pan with baking paper, or use a silicon cake pan.
Sift flour, cacao, baking powder, bicarb soda and date sugar together. Transfer these and all other cake ingredients to a food processor or blender, and blend at high speed until well-combined. Do not over-process or mixture will be too dense.
Pour batter into prepared pan and bake for 40-50 minutes or until a skewer inserted into the middle of the cake comes out clean.
Allow cake to cool completely before slicing into 2 layers. Sandwich layers together with 1/3 of the icing, and use remaining icing to decorate top and sides of cake.
Icing
Drain cashews. Blend all ingredients together at high speed, adding enough soaking liquid from the dates to reach a smooth, spreadable consistency.

^ If you can’t find unsweetened applesauce in your health food shop, buy unsweetened apple purée – the kind that’s sold in the kids’ snack food section at the supermarket; or make your own. I make applesauce in my Thermomix by blending cored, chopped apples for 5 seconds at speed 8, then cooking at 100°C for 10 minutes on speed 2, then blending for 10 seconds on speed 10.
