Sweet potato, blueberries and cacao are all packed with antioxidants. Together, they’re totally awesome!

Ingredients:

1 medium sweet potato
100 g pitted dates
150 g fresh or frozen blueberries
3 tbsp cacao (raw chocolate) powder, or carob powder
100 g baby spinach
50 ml plant milk

 

Method:

Bake sweet potato in its skin for 1 hour at 200°C, or until it’s very soft and is starting to ooze out sweet liquid. Allow to cool, and remove skin.

Purée dates in food processor or high-powered blender, then add sweet potato flesh and remaining ingredients and blend at high speed until light and creamy.
