After my first foray into blending soaked buckwheat (see my Buckwheat Breakfast Parfait) I was hooked! I’ve been experimenting with other buckwheat combos, and this one is my current favourite.

Ingredients:

2 cups raw buckwheat groats, soaked overnight or for at least 8 hours, in plenty of water
1 cup pitted dates
1 cup fresh or frozen blueberries
1/4 cup cacao powder
1 tsp vanilla extract
3/4 cup plant milk
Fresh berries for garnish

 

Method:

Tip soaked buckwheat into a mesh strainer and rinse thoroughly. Transfer to a high-powered blender or food processor, add all ingredients except garnish, and blend on top speed for 60 seconds or until very smooth.

Divide between serving bowls and garnish with fresh fruit.
