Parsnips are a winter vegetable that I never particularly enjoyed, until I discovered how delicious they are when baked! Use your favourite seasonings to add some ‘zing’ to these healthy oven fried.

Ingredients:

Parsnips, trimmed, scrubbed, and cut into thin french fry shapes
Aquafaba (water from cooking chick peas; or the canning liquid from chick peas)
Seasonings of choice e.g. paprika, garlic powder, onion powder, sumac, Mrs Dash

Method:

Preheat oven to 200°C.

Place parsnips on a baking sheet, and toss with aquafaba (about 2 tbsp to every 2parnsips ) and preferred seasonings until well-coated. Arrange fries in a single layer.

Bake for 15 minutes, turn fries over, then bake for another 15 minutes or until golden brown and becoming crispy. Serve immediately.
