Scrumptious Seed Burgers

Nutritious, delicious, and easy and quick to make – what more could you want?

Pumpkin seeds (pepitas), sunflower seeds and sesame seeds:

  • Are rich in minerals such as zinc, iron and calcium;
  • Contain essential fatty acids (‘good fats’);
  • Are good sources of protein;
  • Contain phytosterols which lower cholesterol;
  • And taste great too!

Ingredients:

1/4 cup sesame seeds
1/2 cup raw, unsalted pumpkin seeds (pepitas)
1/3 cup sunflower seeds
1/4 cup chopped shallots
1 tbsp chopped parsley
3/4 cup cooked lentils (any kind) or white beans
2 tbsp rolled oats
3 tbsp no-added-salt tomato paste
2 tsp tahini
Pinch of paprika (smoked, if you can get it!)

 

Method:

Preheat oven to 180°C

Grind sesame seeds in a food processor or high-powered blender until coarsely ground. Add sunflower and pumpkin seeds and process until coarsely chopped.

Add shallots and parsley and process until well blended into seed mixture. Add remaining ingredients and process until just blended.

Shape mixture into 4-6 patties, place on a baking sheet lined with baking paper, and bake for 10 minutes. Flip burgers over and bake for another 8 minutes.
