My favourite fruit and vegie shop had overripe bananas for $3 a box last week. Happy days! I peeled them, chopped them up and popped them in the freezer, and have been experimenting with different versions of Nice Cream ever since.

Baobab powder is optional for this recipe, but it adds to the tanginess – not to mention the nutritional value – of this quick and easy dessert recipe. Baobab powder is rich in a range of antioxidants including vitamin C, and soluble fibre, which preferentially feeds our beneficial gut bacteria.

Ingredients:

2 ripe bananas, peeled and frozen for at least 24 hours
2 tbsp baobab powder (optional, but really worth adding!)
1/4-1/3 cup plant milk
4 passionfruit

 

Method:

Blend bananas, baobab powder and plant milk in a food processor or high-powered blender until smooth and creamy, adding as much plant milk as you need to blend.

Stir in the passionfruit pulp, or use the pulse function to mix it in without crushing the seeds.
